The Best Low-Carb Summer Fruits & Veggies: Sweet Treats Without The Sugar Spike

There is so much fresh food in the summer, with all the delicious flavours and nutrients. This time of year is a minefield if you have to watch your carbs or blood sugars! The good news is that many delightful summer fruits and vegetables are low in carbohydrates and also have a low glycemic index (GI), which is a measure of how quickly and how high the blood sugar rises after carbohydrate ingestion. You can have your delightful little summer treats and live summer to the fullest while still reaching those health goals by sneaking these sweet treats in there without the sugar spike.

Understanding Glycemic Index and Load

Many experts say that the Glycemic Index (GI), or the rate at which blood glucose level increases after eating a carbohydrate-based meal, is a good way to determine which carbohydrates are beneficial and which may not be helpful in maintaining blood sugar levels. Low GI foods (55 or less) make blood sugar rise more slowly and more steadily (and so when blood sugar levels go up) into the blood system. Glycemic Load (GL) takes into account both the GI of the food and the amount of food to provide a more realistic idea of the impact of a food on blood sugar. This way, you can have your natural summer sweetness and stay clear of the ugly-sounding sugar spikes—after all, it's all in the produce that you select (especially the lower GI and gl ones).

Low-Carb Summer Fruits for Sweetness

While fruits are usually a source of natural sugar, many summer varieties are low glycemic and high fibre, so their sugar will offset the sugar effects.

  • Berries: strawberries, blueberries, raspberries, blackberries Not only are they antioxidants, but these nutrient-dense wonders are also high in fibre. Other berries, including strawberries and blackberries, are also unexpectedly low in net carbs (total carbs minus fibre).
  • Watermelon: is high in the GI scale but low in the GL scale because it has so much water. Enjoy it cautiously as a refreshing way to chill down.
  • Cantaloupe and honeydew: These melons are also high in water content and delicious, but they are still low in net carbs if portion control is observed.
  • Peaches and plums: These sweet stone fruits make a fabulous low-carb option for a pick-me-up, as they are full of vitamins and fibre.
  • Avocado: Technically a fruit, and although most people only enjoy it in savoury foods, avocados contain healthy fats and are also among those very low in net carbs, thus providing you with lasting energy.
  • Citrus fruits Lemons, limes & grapefruits: These citrus fruits are incredibly low in sugar! Although slightly higher in sugar than many other citrus fruits, oranges also deliver Vitamin C and fibre — both of which can help!

Best Low-Carb Summer Vegetables

This is the deal on the low-carb summer squashes. They're incredibly versatile and can provide volume, bulk, and flavour to meals with little impact on blood sugar.

Spinach, kale, lettuce, arugula, and other leafy greens — Leafy greens are very low in carbs and offer plenty of vitamins and minerals. They provide the loveliest bottom for salads or can be thrown in a pan to wilt. Cucumbers are so hydrating with their nearly all-water content, and they are roughly carb-free. Toss in salads, make cucumber noodles, or simply eat them! Green and the other colours of Bell Peppers — red, yellow, and orange, are also colourful, crunchy, and surprisingly low, yet nutrient-dense in the Vitamins of the Canadians; these also have a wide variety of the antioxidants.

Zoodles (spiralled squash) are also a great choice, as are zucchini and yellow squash grilled or roasted. Green beans are high in nutrients and fibre and have a low carbohydrate content. And even broccoli, cauliflower, or the big favourites over summer (they come around all year, really) are great low-carb summer staples(they make a great grill, riced, or mashed alternative). All you need are some colourful veggies (the more, the better!) to throw together these satisfying low-carb summer meals.
