High-Protein Lemon Garlic Pappardelle

Packed full of mouth-watering lemon, the delicious aroma of garlic and a creamy base filled with protein kick, this is an all-in-one meal that’s light yet filling after those busy days when you need to rustle something tasty to eat for dinner.
Ingredients
Main:
- 1 pack iTz noT Pappardelle Pasta (konjac, gf and low calorie).
- 150g iTz noT Tofu Herb Garden, torn into pieces
- 1 tbsp iTz noT Garlic and Herb Cooking Paste
- 1 tbsp olive oil (optional)
- 2 cloves garlic, minced
- Juice and zest of 1 lemon
- 1 tbsp iTz noT YAYONAISE
- 1 cup unsweetened almond milk or oat milk
- Salt and pepper, to taste
- Fresh parsley or basil, chopped
Optional Garnish:
- Crushed red pepper flakes for some spiciness
- Extra lemon zest for brightness
Instructions
1️⃣ Prep the Pasta
Drain iTz noT Pappardelle Pasta run water through and rinse.
Dry-fry in a non-stick frying pan for 2-3 minutes each side to draw out the water, and give them a better texture.
Set aside.
2️⃣ Sauté the Base
In a large sauté pan, heat iTz noT Garlic & Herb Cooking Paste (and olive oil if using).
And minced garlic, and sauté for 30 seconds or so, until fragrant.
Stir in iTz noT Tofu Herb Garden and cook for another 3-4 minutes until it lights up with a nice golden colour and smells tasty.
3️⃣ Prepare the Creamy Lemon Sauce
Add iTz noT YAYONAISE and almond milk to the pan, stir until creamy.
Whisk in lemon juice and zest, and season to taste with salt and pepper.
Simmer on a low flame for 2 minutes, until the sauce is thickened slightly.
4️⃣ Combine and Serve
Stir in the cooked iTz noT Pappardelle Pasta until well coated.
Cook for an additional 1–2 minutes to blend the flavours.
Serve sprinkled with parsley, chilli flakes or more lemon zest.
