Ingredients
- 1 pack iTz noT Pappardelle Pasta.
- iTz noT Tofu Herb Garden, cut into pieces
- 1 tbsp Garlic and Herb Cooking Paste
- 1 tbsp olive oil (optional)
- 2 cloves garlic, minced
- Juice and zest of 1 lemon
- 1 tbsp iTz noT MAYONAISE
- 1 cup unsweetened almond milk or oat milk
- Salt and pepper, to taste
- Fresh parsley or basil, chopped
Optional Garnish:
- Crushed red pepper flakes for some spiciness
- Extra lemon zest for brightness
Instructions
1️⃣ Prep the Pasta
- Drain iTz noT Pappardelle Pasta run water through and rinse.
- Dry-fry in a non-stick frying pan for 2-3 minutes each side to draw out the water, and give them a better texture.
- Set aside.
2️⃣ Sauté the Base
- In a large sauté pan, heat Garlic & Herb Cooking Paste (and olive oil if using) and minced garlic, and sauté for 30 seconds or so, until fragrant.
- Stir in iTz noT Tofu Herb Garden and cook for another 3-4 minutes until it lights up with a nice golden colour.
3️⃣ Prepare the Creamy Lemon Sauce
- Add iTz noT MAYONAISE and almond milk to the pan, stir until creamy.
- Whisk in lemon juice and zest, and season to taste with salt and pepper.
- Simmer on a low flame for 2 minutes, until the sauce is thickened slightly.
4️⃣ Combine and Serve
- Stir in the cooked Pappardelle Pasta until well coated.
- Cook for an additional 1–2 minutes to blend the flavours.
- Serve sprinkled with parsley, chilli flakes or more lemon zest.
