The thick udon noodles are the ideal base for a gochujang-inspired sauce, perfectly balanced with smoky paprika-infused tofu. This easy stir-fry is hearty enough for dinner while still light enough for a balanced weeknight meal.
Ingredients
✓ Toppings:
- 1 pack of iTz noT Udon Noodles
- 1 pack of iTz noT Paprika Tofu, cubed
- 1 tbsp Garlic & Herb Cooking Paste
- 1/2 onion, thinly sliced
- 1/2 cup shredded cabbage
- 1/2 carrot, julienned
- 1/2 red bell pepper, sliced
- 1 tbsp sesame oil
- Sesame seeds, for garnish
- 2 tbsp chopped spring onions
✓ Spicy Sauce:
- 1 tbsp iTz noT Smokey BBQ Sauce
- 1 tbsp iTz noT Tomato Ketchup
- 1 tbsp coconut aminos or soy sauce
- 1 tsp apple cider vinegar or rice vinegar
- 1 tsp zero-calorie sweetener or 1 tbsp maple syrup
- 1 tsp Korean gochugaru
- 1/2 tsp chilli flakes
Instructions
Prepare the Noodles
- Rinse the noodles thoroughly, drain well, and set aside.
- Place the noodles in a non-stick pan and dry-fry over low heat for 2–3 minutes to remove excess moisture.
- It’s crucial, as doing so will bring a good texture to noodles.
Stir-frying the Base
- Heat Garlic & Herb Cooking Paste in a large frying pan or wok.
- Add onions, carrots, cabbage and bell peppers.
- Stir-fry for 3–4 minutes until vegetables are soft but still crisp.
- Add the Paprika Tofu cubes to the pan and cook for 3–5 minutes until the edges brown.
Make the Spicy Sauce
- In a small bowl, whisk iTz noT Smokey BBQ Sauce, iTz noT Tomato Ketchup, soy sauce, vinegar, chilli flakes, and the sweetener.
- Pour over the stir-fry and toss until everything is well-coated and turns shiny.
Combine and Finish
- Add the iTz noT Udon Noodles into the pan and toss everything over medium heat until everything is well combined and blooming.
- Finish it off with a drizzle of sesame oil and a sprinkle of sesame seeds and spring onions.
