Spicy Korean-Style Udon Noodle Bowl

Get the punchy, umami-rich flavour of Korean street food in a guilt-free bowl. This recipe uses the thick, slurpable iTz noT Udon Noodles as the perfect low-calorie base to carry a bold and spicy sauce, complemented by the savoury flavour of iTz noT Paprika Tofu. Packed with flavour and high in protein, it delivers all the warmth and satisfaction of Korean-inspired comfort food while keeping things light and wholesome.

The thick udon noodles are the ideal base for a gochujang-inspired sauce, perfectly balanced with smoky paprika-infused tofu. This easy stir-fry is hearty enough for dinner while still light enough for a balanced weeknight meal.

Ingredients

✓ Toppings:

  • 1 pack of iTz noT Udon Noodles
  • 1 pack of iTz noT Paprika Tofu, cubed
  • 1 tbsp Garlic & Herb Cooking Paste
  • 1/2 onion, thinly sliced
  • 1/2 cup shredded cabbage
  • 1/2 carrot, julienned
  • 1/2 red bell pepper, sliced
  • 1 tbsp sesame oil
  • Sesame seeds, for garnish
  • 2 tbsp chopped spring onions

✓ Spicy Sauce:

  • 1 tbsp iTz noT Smokey BBQ Sauce
  • 1 tbsp iTz noT Tomato Ketchup
  • 1 tbsp coconut aminos or soy sauce
  • 1 tsp apple cider vinegar or rice vinegar
  • 1 tsp zero-calorie sweetener or 1 tbsp maple syrup
  • 1 tsp Korean gochugaru
  • 1/2 tsp chilli flakes

Instructions

Prepare the Noodles

  1. Rinse the noodles thoroughly, drain well, and set aside.
  2. Place the noodles in a non-stick pan and dry-fry over low heat for 2–3 minutes to remove excess moisture.
  3. It’s crucial, as doing so will bring a good texture to noodles.

Stir-frying the Base

  1. Heat Garlic & Herb Cooking Paste in a large frying pan or wok.
  2. Add onions, carrots, cabbage and bell peppers.
  3. Stir-fry for 3–4 minutes until vegetables are soft but still crisp.
  4. Add the Paprika Tofu cubes to the pan and cook for 3–5 minutes until the edges brown.

Make the Spicy Sauce

  1. In a small bowl, whisk iTz noT Smokey BBQ Sauce, iTz noT Tomato Ketchup, soy sauce, vinegar, chilli flakes, and the sweetener.
  2. Pour over the stir-fry and toss until everything is well-coated and turns shiny.

Combine and Finish

  1. Add the iTz noT Udon Noodles into the pan and toss everything over medium heat until everything is well combined and blooming.
  2. Finish it off with a drizzle of sesame oil and a sprinkle of sesame seeds and spring onions.
