Introduction:
This Creamy Avocado and Black Bean Pasta is an easy, healthy and delicious pasta and it is loaded with goodness! And wow that creamy, dairy-free sauce that the ripe avocado creates will cling soooo well to the iTz noT Penne Pasta. With so much good fats, fibre, and what not in this dish, I love that a plant based diet can be so delicious and healthy!
Ingredients:
- 1 pack iTz noT Penne Pasta
- 1 ripe avocado
- 1/4 c. black beans, drained and rinsed
- 1/4 cup corn
- 1/4 cup cherry tomatoes, halved
- 1 tbsp lime juice
- 1/4 tsp cumin
- Salt and freshly ground black pepper, to taste
Instructions:

Cook iTz noT Penne Pasta as per the instructions on the packet.

As the pasta is cooking, you can prepare the avocado sauce. In a large bowl, mash a ripe avocado with a fork until it is smooth and creamy.

Whisk in the lime juice and the cumin, salt, and pepper to taste.

Once the pasta is cooked, drain it and add it to the avocado sauce bowl. Toss well with the pasta to combine well. The pasta will also be hot from the water, and that warmth will assist the avocado in melting away into a creamy base.

Gently fold in the black beans, corn and halved cherry tomatoes.
