Creamy Mediterranean Tofu Tagliatelle | iTz noT Tagliatelle and Mediterranean Herbs Tofu

Introduction:

So this Creamy Mediterranean Tofu Tagliatelle is seriously good if you enjoy filling, delicious and plant-based foods. It absorbs the sauce's creaminess and adds some textures with the Mediterranean Herbs Tofu, to fill you up and warm you up!

Ingredients:

  • 1 pack iTz noT Tagliatelle
  • 1 pkt iTz noT Mediterranean Herbs Tofu, diced
  • 1 tbsp olive oil
  • 1/2 cup cashew or soy creamer (if needed for a dairy-free version)
  • 1/2 cup vegetable broth
  • 1/4 cup nutritional yeast
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • A handful of fresh spinach
  • Salt and black pepper, to taste

Instructions:

  1. Rehydrate iTz noT Tagliatelle as directed on the packet. Drain and set aside.

  2. While the pasta will be boiling, heat some olive oil in a larger pan or skillet over medium-high heat. Cube the iTz noT Mediterranean Herbs Tofu and add to the pan, Cook or toss for 5 - 7 minutes until crispy and golden on all sides.

  3. Stir in the minced garlic, sun-dried tomatoes, and sauté for another 1 minute or until fragrant.

  4. Pour in the dairy-free cream and vegan stock. Whisk in the nutritional yeast, salt and pepper. Let the sauce simmer gently.

  5. Add 700g cooked iTz noT Tagliatelle and some fresh spinach while you’re at it. Toss everything together until the pasta is well coated with that creamy sauce and the spinach wilts.

  6. Dollop fresh herbs on top, if using, and serve warm.
