Creamy Mediterranean Tofu Tagliatelle

This Creamy Mediterranean Tofu Tagliatelle is a comforting plant-based dish that is satisfying and full of flavour. The creamy sauce coats the tagliatelle very nicely, while the Mediterranean Herbs Tofu adds extra texture and savoury depth. Ingredients:

  • 1 pack iTz noT Tagliatelle
  • 1 pack iTz noT Mediterranean Herbs Tofu, diced
  • 1 tbsp olive oil
  • 1/2 cup cashew or soy creamer (if needed for a dairy-free version)
  • 1/2 cup vegetable broth
  • 1/4 cup nutritional yeast
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • A handful of fresh spinach
  • Salt and black pepper, to taste

Instructions:

  1. Rehydrate iTz noT Tagliatelle as directed on the packet. Drain and set aside.

  2. While the pasta will be boiling, heat some olive oil in a larger pan or skillet over medium-high heat. Cube the iTz noT Mediterranean Herbs Tofu and add to the pan, Cook or toss for 5-7 minutes until crispy and golden on all sides.

  3. Stir in the minced garlic, sun-dried tomatoes, and sauté for another 1 minute or until fragrant.

  4. Pour in the dairy-free cream and vegan stock. Whisk in the nutritional yeast, salt and pepper. Let the sauce simmer gently.

  5. Add cooked iTz noT Tagliatelle and some fresh spinach while you’re at it. Toss everything together until the pasta is well coated with that creamy sauce and the spinach wilts.

  6. Garnish fresh herbs on top, if using, and serve warm.
